A Cozy Bowl of Comfort: Vegetable Beef Soup with a Twist
I’m a soup gal and will gladly indulge in a bowl anytime of year. But, there’s something so comforting about a warm bowl of soup, especially during the chilly autumn and winter months. While I typically use soup meat for my vegetable beef soup, I found myself in a bit of a pinch this time around. I didn’t have any on hand, but I did have a package of ground beef.
So… I decided to take a chance and use the hamburger instead. Let me tell you, it was a fantastic decision! As the soup simmered on the stove, the aroma teasingly filled the kitchen. I couldn’t wait to taste it, and when I finally did, I was blown away.
Why Hamburg?
I know, I know. It might sound unconventional, but trust me, it works! Ground beef adds a rich, meaty flavor to the soup without breaking the bank. Plus, it’s incredibly versatile and easy to cook.

Vegetable Beef Soup With Hamburg
A comforting blend of tender vegetables, savory beef, and aromatic spices. This homemade soup is the perfect winter warmer!

Cook time: 40 minutes -
Total time: 1 hours
Ingredients
1- | 10oz bag of frozen vegetables |
1- | 14.5oz can of diced tomatoes (drained) |
1- | 8oz can of beef broth |
1- | 32oz container of beef broth |
6- | Large yellow potatoes peeled and cubed |
1- | Pound Ground beef |
1- | Onion diced |
1/2 | cup fresh parsley chopped |
1- | Tablespoon minced garlic |
1- | Tablespoon Mrs. Dash Table Blend seasoning (green cap) |
1/2 | tsp basil |
1/2 | tsp salt |
1/2 | tsp pepper |
Utensils
- Stock pot or dutch oven
- Skillet
- Sharp knives, Spoon for stirring, ladle, spatula
- Cutting board
Steps of preparation
- Peel the 6 yellow potatoes and slice into about 1 1/2in cubes
- Peel and dice the onion
- Wash and chop fresh parsley
- In your stock pot or dutch oven Add the potatoes, frozen mixed vegetables, drained diced tomatoes, 32oz+8oz beef broth (5 cups), parsley, minced garlic, Mrs. dash Table Blend, salt, pepper and basil
- In your skillet sauté the onion at the same time you brown the hamburg. Brown until no pink is visible
- Add the sautéed onion and browned hamburg to ingredients in your stock pot
- Bring stock pot to a boil
- Then reduce heat to medium and continue to boil on medium heat for 30-40 minutes or until you can pierce the potatoes with a fork
- Serve hot and Enjoy!

I make this sometimes, too! I also love to make must-go soup – everything in the refrigerator must go! I take whatever leftovers we have and make it into a soup, using up things like leftover mamwich, spaghetti sauce, chili, taco meat, etc. I also love to use leftover gravy, pasta sauce, etc. as the base for soups. Leftover mashed potatoes are delicious to add as soup thickener, too. The soups I make rarely taste the same, as they are so varied, but combining the leftovers is just delicious!
