Who knew that a simple potato salad could spark such culinary curiosity? I’ve always been a fan of the classic mayo-based potato salad, but I’d never ventured into the world of German potato salad. So after browsing variations on Pinterest I was Intrigued by its warm, comforting nature and the endless variations, so I decided to go for it.
Now, I’m a firm believer in easy, hassle-free cooking, especially when it’s just me. So, I put my lazy hat on and took a few shortcuts
- Steamable Red Potatoes: No boiling water, no draining. Just pop them in the microwave and let them do their thing.
- Bacon Up: Instead of frying bacon, I used Bacon Up, a bacon grease product that adds all the flavor without the mess.
A Flavorful Surprise
The first bite was a bit of a surprise and I really wasn’t sure how I felt about this. The warm, slightly tangy dressing was a departure from the cool, creamy texture I was used to. But as I continued to contemplatively savor each spoonful, I began to appreciate the unique flavor profile. The next day, warmed-up leftovers were even better! The flavors had melded together, creating a truly comforting and satisfying meal.
My Verdict
So, would I make this again? Sure. While it might not be my go-to potato salad recipe, it’s definitely a fun and flavorful addition to my culinary repertoire. If you’re looking to try something new and embrace a bit of German comfort food, I highly recommend giving this lazy version a shot. See my notes about what I’d do different.
Lazy German Potato Salad
A quick and easy take on a classic German dish. This recipe combines the comforting flavors of warm potatoes, tangy dressing, and smoky bacon (or Bacon Up) for a delicious and satisfying meal.

Ingredients
1 | bag 1.5lb steamables red potatoes |
1 | lb fried and crumbled bacon (or 2 Tbsp Bacon Up) |
1/2 | Cup chicken broth |
1 | tsp salt |
1 | tsp pepper |
1 | Onion chopped (or sliced) |
2 | (or 3) Tbsp apple cider vinegar ( rice vinegar works well too if you don’t like to much tang) |
1 | 1/2 Tbsp Sweet & Spicy mustard |
3 | Tbsp fresh washed and chopped parsley |
1 | tsp minced garlic |
1 | tsp white sugar |
1/2 | tsp dill |
Utensils
- Medium pot or Dutch oven
- Cutting board and sharp knives
- Microwave
- Skillet
- Measuring spoons, cups and silicone or wooden spoon for stirring
Steps of preparation
- Begin by microwaving the steamable potatoes according to package instructions (then let cool so you can handle them)
- Next fry your bacon (then set aside on paper towels to cool then crumble)
- Slice or chop your onion and sauté’ with butter (or in my case I sautéed’ the onions in 2 Tbsp Bacon Up). Do this in your medium pot or Dutch oven. You’ll add everything to this later.
- Next wash and chop the parsley
- Combine chicken broth, salt, pepper, apple cider vinegar, dill, mustard, garlic and parsley in small bowel and mix until combined.
- Once the potatoes are cool to work with cut into quarters or bite sized pieces. (You can let the skin on or take it off, it comes off really easy)
- Add the potatoes to the medium pot or Dutch oven where you sautéed your onions. Add bacon and sauce mixture. Gently stir with silicone or wooden spoon.
- I let it all on the stove top on low for about 30 minutes so the flavors meld.
- Serve warm and Enjoy!
Notes
What I would do different next time:
I would use 3 Tbsp apple cider vinegar instead of 2 Tbsp Rice vinegar (I’m not much for tangy).
I would also use bacon I don’t like it crispy so I’d probably fry it to medium.
I think this would go great with green beans.
Alternatives to bacon:
Canadian bacon
Turkey bacon
Finley chopped ham
Bacon Up brand bacon grease
**If you’re making this for more than 2-4 people you can use 2-3 bags of steamables red potatoes and up your ingredients accordingly.
Refrigerate up to 3 days.
What goes good with German Potato Salad:
Bratwurst or other sausages
Schnitzel (pork or chicken)
Sauerbraten
Bangers
Grilled burgers or hot dogs
BBQ ribs or pulled pork
Grilled chicken or steak
Roasted chicken
Baked ham
Grilled fish
Remember, German Potato Salad is served hot it’s versatile and can be paired with many different dishes. Choose what you like best and enjoy!
