Ingredients

4 servings
1 bag Side Delights Steamtable’s Golden Potatoes
1/8 tsp celery seed ( I don’t like celery so I use celery seed or salt, you can use chopped fresh celery)
1/2 tsp minced onion
1/2 tsp chives
1/8 tsp pepper
Salt (to taste)
1/2 cup mayo (I use Hellman’s)
1/2 cup sour cream.
3 hardboiled eggs
Paprika for garnish

Utensils

  • Mixing bowl
  • Mixing spoon
  • Knife
  • Rubber spatula or spoon

Steps of preparation

  1. Prepare the bag of potatoes according to package directions.
  2. Once potatoes are done in the microwave. Cool in cool water.
  3. Peel and cut potatoes into roughly 1 inch cubes. Into your mixing bowl. Along with your peeled and chopped hardboiled eggs.
  4. Add the mayo and sour cream and mix well using the rubber spatula.
  5. Now, add the dry ingredient’s and mix until combined. Sprinkle paprika for garnish.
  6. Chill in refrigerator for 2 hours
  7. Enjoy!

Notes

Steamtable yellow potatoes are a great choice for this recipe because their microwaveable and their waxy texture and ability to hold their shape well.

Feel free to customize the flavor by adding chopped onions, celery, or other vegetables. Experiment with different herbs and spices like dill, mustard powder, or paprika.

Depending on your preference, you can adjust the ratio of mayo and sour cream to achieve your desired consistency and creaminess.

For a fresher taste, serve the potato salad immediately after preparing it. However, if you prefer a chilled salad, store it in the refrigerator for a few hours.

If you have leftovers, store them in an airtight container in the refrigerator. Enjoy within a few days.
