Last week, I found myself under the weather, a miserable victim of a sinus and respiratory infection. The doctor’s visit was done, and I was patiently waiting for my prescription at Walmart. I was hungry though, when you’re sick, your appetite can be as fickle as a toddler. Nothing sounds good, and the thought of cooking a full meal is downright exhausting.
I knew I needed something warm and comforting, but I’m not a fan of chicken noodle soup. So, I decided to whip up a lazy version of chicken and potato soup. Why lazy, you ask? Well, I took a shortcut by using pre-cooked and pulled rotisserie chicken. And since Walmart was out of frozen carrots, I opted for the canned variety.
This lazy approach not only saved me time and energy but also resulted in a delicious and satisfying meal. It was the perfect pick-me-up to soothe my sore throat and warm my bones.
Paula's Lazy Chicken & Potato Soup
This lazy chicken and potato soup is the perfect comfort food for a sick day. It's easy to make, packed with flavor, and will help you feel better in no time. So next time you're feeling under the weather, give this recipe a try!
Ingredients
- 32oz container Chicken broth
- 16 oz Precooked and pulled Rotisserie Chicken
- 8oz can of carrots
- 1/2 Cup washed fresh chopped parsley
- 1 tsp Minced garlic
- 1 Cup chopped onion
- 6 Yellow potato's peeled and chopped into cubes
- Salt, Pepper and seasoning to taste
- 2 Cups water
Instructions
- Add Chicken broth and water to a medium pan turn stove on warm.
- Add carrots, minced garlic, and Rotisserie Chicken
- Wash and chop parsley and add to pot
- Chop onion, peel and cube yellow potatoes and add to pot
- Bring to boil
- Then reduce to medium boil for 30-40 minutes until you can pierce potatoes with a fork.
- Enjpy!
Notes
I find yellow potatoes cook quicker than russet.
You can definitely substitute potatoes for noodles or rice.
Serve with crackers or butter bread for dipping

I’m a big fan of soup – both to eat it, and to make it. I must say, though, that since I discovered rotisserie chicken already deboned and shredded and ready to go, I use it for all my chicken soups. Just call me the Lazy Soup Chef!
