Soup Season is Here!

It’s that time of year again when the crisp autumn air starts to settle in, and nothing sounds more comforting than a warm bowl of soup. While I enjoy soup year-round, there’s something extra special about it on chilly fall days. One of my go-to soups is classic potato soup.

What’s your favorite soup? For me, soup season brings back nostalgic memories of my parents making a variety of soups while I was growing up. My best friend’s husband also makes an incredible potato soup that’s always a hit.

Today, I’m sharing a recipe for a quick and creamy potato soup. I usually prefer yellow potatoes for cooking, but this time I had russet potatoes on hand, so I decided to give them a try. I also typically add chopped carrots to my potato soup, but since I didn’t have any on hand, I left them out.

Creamy Potato Soup

A comforting and hearty bowl of creamy potato soup, perfect for a chilly day. This classic recipe features rich, velvety potatoes blended with heavy cream. Enjoy it on its own or topped with your favorite toppings like bacon, cheese, or chives.

Ingredients

4 servings
4 Large Russet Potatoes peeled and cubed
1/2 Cup chopped green onion (or 1 chopped onion)
1/2 tsp parsley
1/2 tsp garlic powder
1/2 tsp dill weed
1/8 tsp paprika
2 Cups milk
1 Cup heavy cream
Shredded cheese for topping
2 cubes of frozen spinach (Optional).( I freeze spinach mixed with a little olive oil in ice cube trays)
1/8 tsp pepper

Utensils

  • Dutch oven for boiling potatoes
  • Colander for draining the potatoes
  • Mixing spoon for stirring
  • Ladle for serving
  • Soup bowls

Steps of preparation

  1. Peel and cube your potatoes in about 1-2 inch cubes
  2. Boil the potatoes for about 30-45 minutes or until you can pierce with a fork without them falling apart
  3. Drain potatoes in the colander and place them back into the pot
  4. Add the milk and heavy cream, stir
  5. Add the spinach, chopped onion and dry ingredients and stir
  6. I let mine simmer slowly for about 30 minutes. (Be sure to check your not boiling to burnt, you may have to add extra liquid depending on the thickness consistency you prefer.)

I chose croutons and shredded cheese.

Green onion
bacon
Cubed ham
Sour cream
Croutons
Crackers
Bread for dipping
